Sōmen Noodles
Sōmen are very fine, long, round white vermicelli made from buckwheat or wheat flour that have a short cooking time. Unlike most other types of Japanese noodles, the dough is not rolled out and cut into strips but stretched lengthwise. Compared to udon noodles, sōmen have a rather sweet taste. They are eaten both hot and cold.
